If you don't know already, you will soon discover that I am a HUGE fan of the Instant Pot. I use mine at least three times a week: to proof bread, make yogurt, bake a cheesecake.... The food I make has to be quick, easy, delicious and (mostly) healthy, and the Instant Pot helps so much with all of that.
Recently, my garden has been gifting me with pounds and pounds of tomatoes.
Not wanting to waste even one, I found myself searching for recipes. I came across this Instant Pot Spaghetti Sauce from Detoxinista. I love that it is made with easy to find, whole food ingredients. It is sweetened with carrots, so no need to add sugar if that is something you are avoiding. I doubled the recipe and made enough to fill seven, 500ml jars.
I placed these directly in my freezer, so I will be able to enjoy them later when fresh picked tomatoes are just a happy memory.
